Ingredients
For Roasted Herb Tomatoes & Garlic:
3-4 lbs. ripe organic tomatoes, cut into wedges
2 garlic bulbs
For Soup:
½ onion, chopped
1 tablespoon extra-virgin olive oil
2 cups vegetable stock
4 tablespoons tomato paste
1 teaspoon sea salt (plus more to taste)
½ teaspoon black pepper
½ teaspoon smoked paprika
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon dried parsley
½ teaspoon red pepper flakes
½ teaspoon dried thyme
Toss tomatoes and garlic in olive oil and seasonings and roast until charred.
Sauté onions in olive oil. Blend with roasted tomatoes, garlic, tomato paste, seasonings, and stock.
Remove from heat and add cream
Serve with optional garnishes
