Lebanese Lamb & Green Beans

INGREDIENTS & METHOD

  • 2 lbs. leg of lamb, cubed

  • 4 cups green beans

  • 1 small can tomato paste

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 lemon, juiced

  • ½ teaspoon each cinnamon, coriander, black pepper, nutmeg, allspice, paprika

  • 2 cups fresh mint

  • Olive oil

Sauté lamb and onions in olive oil until lightly browned. Add tomato paste and spices and sauté for another 3 minutes. Add green beans, juice of lemon, garlic, and cover with water. Bring to a boil and reduce to a simmer for 1 hour or until beans are tender. Add fresh mint and cook for three minutes more. Serve over rice or mashed potatoes.
